Il territorio della provincia di Avellino, ricco di zone boschive dove la natura regna incontaminata, da sempre è il regno di un frutto prezioso per le sue caratteristiche nutrizionali e organolettiche, per la sua versatilità in cucina, ma soprattutto per il suo gusto inconfondibile: la castagna. Alcuni preziosi manoscritti attribuiscono ai monaci benedettini il merito di aver diffuso i primi castagneti in Campania e, in particolare,  nelle aree montane e pedemontane dei monti Picentini, nei secoli XI e XII. La castagna è attualmente tra i prodotti irpini più famosi e di qualità: è diffusa sull’intero territorio comprendendo in modo specifico il Terminio, particolarmente Montella, il Partenio, soprattutto Serino fino a Montoro e Calvanico.

The territory of the province of Avellino, rich in wooded areas, where unspoilt nature reigns, it has always been the kingdom of a precious fruit for its nutritional and organoleptic characteristics, for its versatility in cooking, but above all for its unmistakable taste: the chestnut. Some precious manuscripts attribute to the Benedictine monks the merit of having spread the first chestnut groves in Campania and, in particular,  in the mountain and foothill areas of the Picentini mountains, in the eleventh and twelfth centuries. The chestnut is currently among the most famous and high quality products of Irpinia: is widespread throughout the territory and specifically includes the Terminio, particularly Montella, the Partenio, mostly Serino up to Montoro and Calvanico.

Le territoire de la province d’Avellino, riche en zones boisées où la nature règne intacte, est depuis toujours le royaume d’un fruit précieux pour ses caractéristiques nutritionnelles et organoleptiques, pour sa polyvalence en cuisine, mais surtout pour son goût incomparable : la châtaigne.

D’anciens manuscrits attribuent aux moines bénédictins le mérite d’avoir créé aux XIe et XIIe siècles les premières châtaigneraies en Campanie et, en particulier dans la zone montagneuse des monts Picentini. La châtaigne est actuellement l’un des produits les plus célèbres de la région Irpinia : elle est répandue sur tout le territoire, du Mont Terminio au parc régional du Partenio, en passant par Montoro et Calvanico.

Oltre a essere un frutto molto appetitoso le castagne sono ricche di principi nutritivi, preziosi per la salute e il benessere dell’organismo. Le castagne non contengono glutine e sono quindi consumabili da tutte le persone interessate dal morbo celiaco. Sono molto digeribili e sono consigliate in casi di anemia e inappetenza. Grazie all’abbondante presenza di fibre sono molto utili per la funzionalità  dell’intestino. Essendo ricche di minerali le castagne sono particolarmente indicate per chi soffre di stanchezza cronica, per chi deve riprendere le forze dopo l’influenza, per bambini ed anziani, per chi pratica sport o lavori faticosi. Sono un frutto ricco di vitamina C che sappiamo avere proprietà antiossidanti molto utili alla salute dell’organismo. A causa di queste proprietà nutritive si potrebbe pensare che questo frutto sia un alimento che faccia ingrassare, ma in realtà  la castagna contiene pochi grassi, molta acqua ed il suo apporto calorico non è molto alto.

Because of these nutritional properties you might think that this fruit is a food that makes you fat, but in reality the chestnut contains few fats, a lot of water and its calorie intake is not very high.

En plus d’être un fruit très appétissant, les châtaignes sont riches en nutriments précieux pour la santé et le bien-être de l’organisme. Elle ne contiennent pas de gluten et sont donc consommables par toutes les personnes touchées par la maladie cœliaque. Très digestibles, elles sont recommandées en cas d’anémie ou de perte d’appétit et la présence abondante de fibres les rendent très utiles pour le bon fonctionnement de l’intestin. Riches en minéraux, les châtaignes sont particulièrement indiquées pour ceux qui souffrent de fatigue chronique ou ceux en convalescence, pour les enfants et les personnes âgées, les sportifs ou encore ceux qui ont un travail physique. C’est un fruit riche en vitamine C et en vertus antioxydantes très utiles à la santé de l’organisme.

En raison de ces propriétés nutritionnelles, on pourrait penser que ce fruit est un aliment qui fait grossir mais la châtaigne contient en réalité peu de graisses, beaucoup d’eau et son apport calorique est donc peu élevé.

La castagna è notoriamente un prodotto molto versatile in cucina e in pasticceria. La châtaigne est un produit très polyvalent en cuisine et en pâtisserie. Torta alle castagne

Ingredienti:
250 gr di castagne – 2 cucchiai di lievito
250 gr di burro -150 gr di zucchero
4 uova – 400 gr di farina 00
100 ml di latte – 1 mela
zucchero q.b. –  sale q.b.
succo di limone q.b. – kirsch q.b.
Preparazione:
Mescolare il burro e ammordibidetelo, unitevi zucchero e sale e aggiungere uno dopo l’altro le uova mescolando fino a quando il composto risulti chiaro. Mescolate anche la farina ed il lievito in polvere alternando con del latte.
Unite ora succo di limone, zucchero vanigliato e la mela in uno stampo. Sgocciolate le castagne conservandone il liquido, tritate e unite alla farina e al kirsch alla pasta rimasta, versando il tutto nello stampo.
Ponete in forno caldo a 180° per poco più di un’ora. Una volta pronta sfornate, intiepidite, rimuovere dallo stampo e fate raffreddare prima di servire.

Ingredients:

250 grams of chestnuts – 2 tablespoons of yeast
250 grams of butter -150 grams of sugar
4 eggs – 400 grams of flour 00
100 ml milk – 1 apple
sugar q.b. –  salt q.b.
lemon juice q.b. – Kirsch q.b.

Preparation:

Mix the butter and soften it, add sugar and salt and add the eggs one after the other, stirring until the mixture is clear. Mix also the flour and baking powder alternating with milk.Now add lemon juice, vanilla sugar and apple in a mold. Drain the chestnuts, preserving the liquid, chopped and combined with flour and Kirsch to the remaining pasta, pouring everything into the mold.Place in a hot oven at 180 a.m. for a little more than an hour. Once ready bake, cool, remove from the mold and let cool before serving.

Ingrédients:

250 g de châtaignes – 2 cuillères à soupe de levure
250 grammes de beurre -150 grammes de sucre
4 oeufs – 400 grammes de farine 00
100 ml de lait – 1 pomme
Sucre, sel, jus de citron et Kirsch en quantités suffisantes

Préparation:

Mélanger le beurre ramolli, le sucre et le sel et ajouter ensuite un à un les œufs en remuant jusqu’à ce que le mélange devienne clair. Dans un autre plat, mettre la farine et la levure et remuer en alternance avec du lait.Mélanger maintenant le jus de citron, le sucre vanillé et la pomme dans un moule. Égoutter les châtaignes en conservant le liquide, hacher et incorporer à la farine et au Kirsch et puis au reste, en versant le tout dans le moule. Placer au four chaud à 180°C pendant un peu plus d’une heure. Une fois cuit, sortir du four, faire tiedir, retirer ensuite du moule et laisser refroidir avant de servir.

Risotto alle castagne

Ingredienti:
300 g di castagne pelate
300 g dì riso
30/50g di burro – 50/70 ml di cognac secco
sale q.b. – pepe q.b.
brodo di vitello
maggiorana.
Preparazione:
In una casseruola soffriggete il burro e la cipolla tritata finché il soffritto sarà pronto e chiaro.
Aggiungete il riso e fatelo cuocere fino ad assorbire il tutto.
Aggiungete il cognac secco e lasciate ancora ad asciugare; aggiungete le castagne pelate fresche e spezzate grossolanamente.
Salate e pepate.
Portate a cottura con brodo cli vitello leggero, mantenendo il riso al dente.
Servite caldo guarnendo con maggiorana.

Ingredients:

300 g of peeled chestnuts
300 g of rice
30/50g butter – 50/70 ml dry cognac
salt q.b. – pepper q.b.
veal broth
marjoram.

Preparation:

In a saucepan fry the butter and chopped onion until the sauce is ready and clear.Add the rice and cook until it absorbs.Add the dry cognac and let dry again; add the peeled chestnuts fresh and broken coarsely.Salty and peppery. Cook with light veal broth, keeping the rice al dente. Serve hot garnished with marjoram

Ingrédients:

300 g de châtaignes pelées
300 g de riz
30/50 g de beurre – 50/70 ml de cognac sec
sel et poivre en quantité suffisante
bouillon de veau
marjolaine.

Préparation:

Dans une casserole, faire revenir le beurre et l’oignon haché jusqu’à ce que la sauce soit prête et claire. Ajouter le riz et faire cuire jusqu’à absorption du tout.Ajouter le cognac et laisser encore absorber; ajouter les châtaignes pelées fraîches et concassées grossièrement.Saler et poivrer à convenance.Porter à la cuisson avec le bouillon de veau et en gardant le riz al dente.Servir chaud et garnir avec la marjolaine.

Tronco di castagne

Ingredienti:
500 g di castagne – alloro
sale – 100 g di zucchero
50 g di cacao – 50 ml dl latte
50 ml di cognac – 100g di zucchero a velo
2 tuorli d’uovo – mezza tazzina di caffè
120 g di burro – panna montata.
Prepazione:
Fate cuocere le castagne in acqua aromatizzata con alloro e sale; spellate bene le castagne (a freddo).
Preparate un impasto secondo il seguente ordine: zucchero, cacao, latte, cognac e aggiungete le castagne passate o macinate a parte, così da avere un composto uniforme che si stenda su un canovaccio umido.
Preparate una farcitura secondo la seguente scaletta: zucchero a velo, tuorli d’uovo, caffè, burro.
Stendete la farcitura sul composto di castagne ed arrotolate a tronco; portate su un piatto lungo e ritoccate la farcitura sulla parte esposta, ornando con incisioni varie e ciuffetti di panna montata.

500 g chestnuts – laurel
salt – 100 g sugar
50 g cocoa – 50 ml milk
50 ml cognac – 100g powdered sugar
2 egg yolks – half a cup of coffee
120 g butter – whipped cream.

Preparation:

Cook the chestnuts in water flavored with bay leaf and salt; peel the chestnuts well (cold).Prepare a dough according to the following order: sugar, cocoa, milk, cognac and add the chestnuts passed or ground separately, so as to have a uniform mixture that lies on a damp cloth.Prepare a filling according to the following schedule: powdered sugar, egg yolks, coffee, butter.Spread the filling on the mixture of chestnuts and rolled in a trunk; bring on a long plate and retouch the filling on the exposed part, decorating with various incisions and tufts of whipped cream.

Ingrédients:
500 g de châtaignes – laurier
sel – 100 g de sucre
50 g de cacao – 50 ml de lait
50 ml de cognac – 100 g de sucre glace
2 jaunes d’œufs – demi-tasse de café
120 g de beurre – crème fouettée.
Préparation:
Faire cuire les châtaignes dans l’eau aromatisée avec du laurier et du sel; bien peler les châtaignes (à froid).
Préparer une pâte selon l’ordre suivant : sucre, cacao, lait, cognac et ajouter les châtaignes moulues séparément afin d’avoir un mélange uniforme qui s’étale sur un chiffon humide.
Préparer une garniture avec le sucre glace, jaunes d’œufs, café, beurre.

Étaler la garniture sur le mélange de châtaignes et enrouler; mettre sur une assiette longue et retoucher la garniture sur la partie exposée en ornant avec des gravures diverses et des touches de crème fouettée.
